Flaky, Egg-less Sugar Cookies With Coconut

Preheat oven to about 350 degrees.
In a flat pan, rub with fingers to spread:
1/2 cup liquid ghee
Mix together:
1 cup white all-purpose flour
1/4 teaspoon baking soda
Add to the ghee alternately, kneading in bit by bit:
the flour mixture
1 cup confectioners' sugar
Break off small pieces of dough, and roll into 3/4" balls. Press out on an ungreased cookie sheet into thin circles, stars, or other shapes about 1/16" thick and 2 1/2" in diameter.
Sprinkle with and press in:
1-2 teaspoons Indian poppy seeds**
1-2 teaspoons unsweetened, shredded coconut
Bake for 5-10 minutes until only slightly browned. Let cool and serve.
**If you do not have Indian poppy seeds, do not substitute regular poppy seeds, just omit the seeds altogether. The cookies will still be terrific.
