Shrikhand Recipe

Sweet, Thickened Yogurt With Delicate Seasoning and Powdered Nuts

Place in a cheesecloth:
3 1/2 cups (2lbs.) whole milk plain yogurt *
Let hang from the kitchen faucet for about 3 hours or until all the liquid has drained. Pull the yogurt through the cheesecloth into a bowl. Alternatively, you can line a fine sieve with cheesecloth or a clean white cotton handkerchief, and let the yogurt drain that way.
Add:
1/4 cup mixed unsalted almonds/cashews/pistachios, powdered
5 whole cardamoms, peeled and powdered, or 1 tsp. ground cardamom
1/4 tsp. powdered saffron
1/2 cup sugar (more or less, to taste)
Mix well and chill.
Some people will prefer this dessert with less cardamom. It can be eaten with fresh or canned fruits, topped over gelatin and pies, or by itself.
* You can make this dessert with low-fat or even non-fat yogurt, and it will still taste very good.
