Fluffy Halva Recipe

Fluffy Cream of Wheat Pudding

In a medium-sized saucepan, heat:
1 TBS + 1 teaspoon ghee
2/3 cup uncooked cream of wheat
Stirring frequently over low heat, cook until the cream of wheat has lightly browned, bout 5-10 minutes. Remove from the pan and set aside.
In another saucepan, heat together to a brisk boil:
2 cups water
1/2 - 2/3 cup sugar
3/4 teaspoon cardamom powder
Mix in the browned cream of wheat. Cover, turn the heat to very low, and cook for 5-10 minutes. Check now and then to see if the mixture is thickening, but do not disturb the mixture much.
When thickened, remove from the heat. The mixture will thicken more as it cools.
If you wish, you can mix in any or all of the ingredients below just before serving:
2 teaspoons raisins
2 teaspoons almonds, coarsely chopped
2 teaspoons cashews, coarsely chopped
