Sweet Chirote Recipe

Rich White Flour Rounds, Fried and Dusted With Confectioners Sugar

In a flat pan (easier than a bowl), mix together with your fingers:
2 cups white all-purpose flour
1 TBS ghee
Gradually add warm water (about 1/2 cup), mixing well to form a dough.
Knead well. Add about 1 teaspoon more ghee, and knead until very smooth. Pinch off lemon-sized balls and flatten, then roll out to 5 inch circles.
Mix together in a small bowl with fingers:
1 TBS ghee
pinch rice flour
Spread some of theis mixture onto one circle, and top with another circle. Spread with more ghee mixture. Continue to add circles and top with ghee until all the circles are used. Roll up tightly like a jelly roll. Roll the tube on a flat surface until it is 12 inches long and 1 inch wide. Slice into 3/4 inch slices. Roll these into 3 inch circles.
Deep-fry in vegetable oil, pressing with a spatula so the inner layers will cook well. Flip over when the top side is white and puffy when pressed with spatula.
Shake the finished chirote in a paper bag until well coated with:
