Balu Shahi Recipe
Glazed Sweet Doughnut Disks
- In a bowl, mix with wet hands:
- 2 cups white all-purpose flour
- 1/2 cup ghee
- 1/2 cup yogurt
- 1/4 teaspoon baking soda
- Knead well and let rest 10-30 minutes.
- Form the dough into fourteen 1 1/2" balls. Then flatten each ball between your palms into a 2" disk; make a central thumb-print depression in each disk. In a small frying pan, deep-fry the disks in ghee (or oil) until browned; remove and drain on paper towels.
- Make a syrup by combining in a small saucepan over low heat:
- 3/4 cup sugar
- 1/2 cup water
- Let boil until it reaches 240 degrees on a candy thermometer (three string stage). Dip the disks into the syrup, and turn several times so they can soak up some syrup. Remove to a serving dish. When all the disks are dipped, pour any left-over syrup over the top to make a glaze.
