Pedha Recipe
Powdered Milk Fudge
- In a large, heavy saucepan, mix together over low heat:
- 1/4 cup unsalted butter
- 1/2 cup milk
- 1/2 cup heavy cream
- 1/2 cup sugar
- 1 teaspoon cardamom powder
- Let boil, stirring frequently, until thickened (about 5-10 minutes).
- Add:
- 2 cups powdered milk (enough powder for 2 quarts of milk)
- Mix very thoroughly over low heat for 2 minutes, then remove from the heat. The mixture will be very stiff and dry. Let cool until it can be handled easily. Roll into 1" balls, then flatten gently to 1 1/2" rounds.
- Dust lightly with:
- confectioners' sugar.
