Fluffy Mysore Pak Recipe
Fluffy, Rich Peanut Squares
- In a blender or food processor, coarsely grind (or place nuts in a plastic bag and crush with a rolling pin):
- 1 cup roasted peanuts
- In a small saucepan on low heat, warm:
- 1 1/2 cups ghee
- In a separate larger saucepan, heat:
- 1 1/2 cups sugar
- 3/4 cup water
- Bring this sugar-water to a boil, and cook until at the "single thread" stage - 226 degrees on a candy thermometer.
- Now add:
- the ground peanuts
- Continue to cook, stirring constantly, until the mixture starts to pull away from the sides of the pan. Now add the warmed ghee, about 2 Tablespoons at a time, stirring constantly. The mixture will be fluffy. Turn the contents of the saucepan into a fine strainer for a few minutes to drain out the extra ghee. When there is only a slow drip of ghee from the strainer, turn the mixture out onto paper towels (to absorb the remaining ghee), and while still warm, shape into a 7 1/2" round patty 3/4" thick; slice into 1" diamonds. Let cool.
- This dessert can be kept in the freezer or in an airtight plastic container in pantry.
