Brown Sugar Fudge Recipe

Indian Flavored Fudge From Indian Brown Sugar, Chapati Flour, and Ghee

Mix in a saucepan over low heat, stirring constantly:
1 cup Indian whole wheat flour (also called "chapati flour"), or whole wheat pastry flour
1/2 cup ghee
Cook for about 5 minutes, until slightly browned.
Add:
1 cup brown sugar, preferably Indian brown sugar
Cook, stirring constantly, until all the sugar is just melted, about 5 minutes.
Press into an 8" round cake pan or pie plate greased with ghee, using the back of a bowl or cup to knead until shiny. Cut into 1" diamonds immediately. Let cool, then remove from the pan in pieces.
