Brown Sugar Fudge Recipe
Indian Flavored Fudge From Indian Brown Sugar, Chapati Flour, and Ghee
- Mix in a saucepan over low heat, stirring constantly:
- 1 cup Indian whole wheat flour (also called "chapati flour"), or whole wheat pastry flour
- 1/2 cup ghee
- Cook for about 5 minutes, until slightly browned.
- Add:
- 1 cup brown sugar, preferably Indian brown sugar
- Cook, stirring constantly, until all the sugar is just melted, about 5 minutes.
- Press into an 8" round cake pan or pie plate greased with ghee, using the back of a bowl or cup to knead until shiny. Cut into 1" diamonds immediately. Let cool, then remove from the pan in pieces.
