Roasted Chickpea Squares Recipe
Sweet, Spiced Squares Made From Roasted Chickpeas
- In a blender, grind to a powder:
- 1 cup roasted dry chickpeas
- In a small saucepan, make a sugar syrup by combining:
- 2/3 cup sugar
- 1/2 cup water
- Simmer until you reach the "thread stage" (226 degrees on a candy thermometer).
- Working quickly, immediately take off the heat, add, and mix well:
- the powdered roasted chickpeas
- 1 teaspoon cardamom powder
- Add quickly and mix well:
- 1 TBS ghee
- Quickly and firmly press the mixture into a 7" circle about 1/4" thick on a greased, flat pan,. Sprinkle with:
- 1 TBS white Indian poppy seeds*
- 1 TBS unsweetened coconut
- Let cool; cut into 1 1/2" diamonds and serve. Sometimes this comes out crumbly, but it will still taste delicious.
- *Can be omitted - do not substitute black poppy seeds.
