Roasted Chickpea Squares Recipe

Sweet, Spiced Squares Made From Roasted Chickpeas

In a blender, grind to a powder:
1 cup roasted dry chickpeas
In a small saucepan, make a sugar syrup by combining:
2/3 cup sugar
1/2 cup water
Simmer until you reach the "thread stage" (226 degrees on a candy thermometer).
Working quickly, immediately take off the heat, add, and mix well:
the powdered roasted chickpeas
1 teaspoon cardamom powder
Add quickly and mix well:
1 TBS ghee
Quickly and firmly press the mixture into a 7" circle about 1/4" thick on a greased, flat pan,. Sprinkle with:
1 TBS white Indian poppy seeds*
1 TBS unsweetened coconut
Let cool; cut into 1 1/2" diamonds and serve. Sometimes this comes out crumbly, but it will still taste delicious.
*Can be omitted - do not substitute black poppy seeds.
