In a small saucepan, boil in water for 5 minutes.
1 large or 2 medium beets, peeled
It will still be quite firm. Then grate or shred it.
In a small bowl, combine the shredded beet with:
1/2 teaspoon sugar
1/2-1 teaspoon salt (to taste)
1/2-1 teaspoon ground black pepper (to taste)
1/4 cumin/coriander powder
1 teaspoon lime juice
