|  | Pakora (Bhaji) RecipeSpicy, Deep-fried Chickpea Flour Dumplings
In a bowl, mix:
6 Tablespoons rice flour
2 1/4 cups chickpea flour
Add spices:
1 1/2 teaspoons salt
3/4 teaspoon oregano seeds (ajama)
3/4 teaspoon hot red pepper powder (opt.)
3/4 teaspoon cumin seeds
3/4 teaspoon cumin/coriander powder
1/4-1/2 teaspoon turmeric
1/8 teaspoon baking soda
Mix in:
2 1/4 cups water or enough to make a thick batter
Add:
3 small onions, coarsely chopped
1 fresh hot pepper, chopped large
1 1/2 Tablespoons cauliflower, chopped (or other raw veg., eg. spinach)
1 1/2 Tablespoons fresh coriander, chopped
Stir well to combine, then remove the large hot pepper pieces. Heat some oil in a deep fryer, fry the mixture 1 Tablespoonful at a time, and drain.
These may be served with Apple Butter Chutney, pg. 36, or Coriander Chutney, pg. 38.
