Saffron Sweet Rice Recipe

Rice Seasoned With Saffron And Sweetened With Sugar

In a saucepan, combine:
3 1/2 cups water
2 cups uncooked basmati rice
Bring to a boil, cover, and simmer on low heat for 25-30 minutes, until the water is absorbed.
In a bowl, mix:
the cooked basmati rice (about 4 cups)
2/3 cup sugar
1/4 teaspoon turmeric
1/4 teaspoon crushed saffron
In a saucepan, melt:
4 teaspoons ghee
Add to the saucepan and sauté:
2 cinnamon sticks, crushed or broken into 2-4 pieces
8-10 whole cloves
8-10 whole green cardamoms, or 1 teaspoon cardamom powder
8-10 whole black peppercorns
When spice mixture "pops," add the rice mixture. Cover and sauté until warmed through.
You may remove the whole spices before serving, or not; just advise your family or guests to avoid eating them.
